Lin a baking sheet with some parchment paper to keep things from sticking. In a bowl, mix together the almond flour, almond butter, and vanilla extract until it comes together into a soft dough. Roll the dough into small balls, about half an inch each, and place them on the baking sheet. Pop the tray into the freezer for about 20 minutes so the balls can firm up. While that’s chilling, melt the chocolate chips in a microwave-safe bowl, heating in short 15-second bursts and giving it a good stir each time until smooth. Once the dough balls are set, dip them into the melted chocolate, then put them back on the baking sheet.
