Melt the butter in a large pot over medium heat. Add the onion, sweet potato, red bell pepper, celery, zucchini, jalapeno, and garlic, and cook everything together, stirring often, until the veggies have softened—this should take about 10 minutes. Next, pour in the vegetable stock and add the quinoa, cumin, oregano, salt, black pepper, and cayenne. Bring the mixture up to a boil, then lower the heat, cover the pot, and let it simmer until the quinoa is cooked through, around 10 to 15 minutes. Once the quinoa is tender, stir in the peanut butter and let the soup simmer for another 20 minutes or so, allowing all the flavors to meld together nicely. Give it a taste and adjust seasoning if needed before serving.
