Step 1
Lightly heat your oven to 375ยฐF (190ยฐC). In a food processor, blend the almonds, sugar, butter, flour, and egg until the mixture is nice and smoothโthen set it aside. Next, toss the graham cracker crumbs, sugar, and melted butter into the processor and pulse until everything is combined and crumbly.
Step 2
Press this graham cracker mixture firmly into the bottom of a 9-inch springform pan to form your crust. Pour the almond filling over it, spreading it out evenly. Arrange the sliced pears in a circle on top for a pretty finish.

Pop the tart into the oven and bake for about 40 minutes, or until the almond filling is set and doesnโt jiggle when you gently shake the pan. Once itโs done, take it out and let it cool down.
Step 4
While the tart is cooling, warm up some apricot jam in a small saucepan over medium heat until itโs melted and smooth. Use a pastry brush to gently glaze the top of the tart with the jam for a lovely shine.
