Step 1
Lightly heat your oven to 350°F (175°C) and lightly grease two baking sheets. In a large bowl, combine the quick oats, flour, coconut, brown sugar, and ginger. Use your fingers to make a little well in the center of the dry mix.

Dissolve the baking soda in some boiling water. In a small saucepan, melt the butter, then stir in the golden syrup until everything is well mixed. Pour the baking soda mixture into the melted butter and syrup, then add this wet mixture into the well you made in the dry ingredients.

Gently stir everything together until just combined — don’t overmix. Drop spoonfuls of the dough, about a rounded tablespoon each, onto your prepared baking sheets, leaving a couple of inches between each one.

Pop them in the oven and bake until they turn a nice golden brown, which should take around 10 to 15 minutes. Let them cool a bit before enjoying!
