Step 1
Gently heat your oven to 325°F (165°C) and greasing an 8-inch square baking dish with some nonstick spray. Toss your cubed bread into the dish and set it aside for now.

In a saucepan over medium-low heat, bring the milk, cardamom pods, allspice berries, cinnamon, and nutmeg to a gentle simmer. Let it cook for about 5 minutes to infuse all those warm spices, then take it off the heat and let it cool for 15 minutes. Once cooled, strain the milk into a bowl to get rid of the whole spices.

Melt 4 tablespoons of butter in a skillet over medium-high heat. Add the apple pieces and sauté until they’re nice and tender, about 5 minutes. Remove the pan from the heat and stir in 1 cup of brown sugar, vanilla, and caramel extracts until the sugar dissolves. Pour this sweet, spiced apple mixture over the bread cubes and give everything a good toss so the bread soaks up the flavors.

In another bowl, beat the eggs together with the cooled spiced milk until well combined. Pour this mixture evenly over the bread and apples. Let it sit for 10 to 15 minutes so the bread can absorb all the liquid—press down gently on the cubes now and then to help it along.

Sprinkle the remaining 1/4 cup of brown sugar over the top. Melt the rest of the butter in the microwave (about 15 to 30 seconds), then drizzle it over the sugar.

Pop the dish into the oven and bake until the pudding is set and a toothpick comes out clean—this usually takes between 45 and 60 minutes. You can enjoy it warm or let it cool and serve it cold, whichever you prefer!
