Directions
Warm your oven to 350Β°F (175Β°C) and lining a muffin tin with paper liners. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt. In a separate large bowl, beat the buttermilk, melted butter, honey, brown sugar, egg, and vanilla until everything is well combined. Gradually add the dry ingredients to the wet, stirring gently until just mixed. Fold in the chopped apple, grated carrot, and chia seeds until theyβre evenly distributed. Scoop the batter into the muffin cups, filling each about three-quarters full. Bake for around 25 minutes, or until a toothpick poked into the center comes out clean. Let the muffins cool in the pan for a few minutes before moving them to a wire rack to cool completely.
