Heat your oven to 350°F (175°C). In a big bowl, whisk together the white wine, apricot jam, brown sugar, olives, olive oil, red wine vinegar, capers, cilantro, garlic, and a splash of caper brine until everything is well combined.

Heat a couple of tablespoons of oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook them for about 1 and a half minutes on each side, just until they get a nice golden color—don’t worry about cooking them through yet.
