Kitchen Tricks
- Trim the woody ends before cooking to avoid bitterness.
- Simmer gently to preserve the bright green color and fresh flavor.
Directions
Warm some olive oil in a saucepan over medium heat. Toss in the onions, mushrooms, and garlic, and cook them gently, stirring now and then, until the onions become soft and fragrantโthis usually takes about 5 minutes. Next, add the asparagus pieces along with the wine, thyme, and a pinch of black pepper. Keep everything moving in the pan until the asparagus is tender, which should take another 5 minutes or so. Pour in 2 cups of broth and let the soup simmer for 5 to 10 minutes to marry the flavors. Once everything is cooked, use an immersion blender to puree the soup until itโs nice and smooth. Stir in the cream, then add the remaining broth a little at a time until the soup reaches the consistency you like. Give it one last gentle simmer to warm through, and itโs ready to serve.
