Step 1
In a large bowl, mix together the ground bison, egg, crushed crackers, Italian seasoning, Worcestershire sauce, garlic salt, black pepper, and a pinch of coarse salt. Once everything is combined, shape the mixture into four big burger patties. Pop them on a plate lined with wax paper and throw them in the fridge until youโre ready to cook.
Step 2
Get your grill heating up to medium-high and give the grates a light brush of oil so nothing sticks. Place the burgers on the grill and let them cook for about 2 minutes before flipping. After flipping, brush the tops with some barbecue sauce, then flip again. Keep grilling until the burgers are cooked through and no longer pink in the centerโthis usually takes around 8 minutes total. If you have a meat thermometer, it should read at least 160ยฐF.
Step 3
Once the burgers are almost done, turn off the grill and lay two slices of cooked bacon and a slice of cheddar cheese on each patty. Close the lid and let the cheese melt for about a minute.

Finally, transfer the burgers to your buns, add a crisp leaf of lettuce on top, and youโre ready to dig in!
