Step 1
Warm some oil in a large skillet over medium heat. Toss in the red bell pepper, celery, and onion, and cook them gently, stirring now and then, until theyโre nice and softโthis usually takes about 5 to 10 minutes. While thatโs going on, go ahead and preheat your oven to 375ยฐF (190ยฐC).

In a big bowl, mix together the stuffing mix, cream cheese, butter, and the beaten egg. Pour in the hot water and stir everything until itโs well combined. Let the mixture sit for about 10 minutes so it can soak up the liquid. Once thatโs ready, fold in the cooked pepper mixture.
Step 3
Shape the stuffing mixture into bite-sized balls, around an inch each. Pour some bread crumbs into a shallow dish and roll the balls around until theyโre coated. Place them on a baking sheet and gently flatten each one into a small patty. Wrap each patty with a slice of bacon.
Step 4
Pop the baking sheet into the oven and bake until the bottoms are golden and crispy, about 10 minutes. Then flip them over and bake for another 10 minutes or so, until the bacon on top gets nice and crisp.
