Step 1
Cut the cinnamon rolls into about 1-inch pieces. In a bowl, whisk together the milk, eggs, vanilla extract, and cinnamon until well combined. Slice one banana and spread the pieces evenly in the bottom of a 9x13-inch baking dish, then sprinkle brown sugar over the bananas. Arrange the cinnamon roll pieces on top of the banana layer. Pour the egg mixture evenly over the rolls, then gently press them down with a spatula so they soak up the liquid nicely. Cover the dish with foil and pop it in the fridge for at least an hour, or overnight if you have the time.

When you're ready to bake, preheat the oven to 375°F (190°C). Bake the rolls covered for about 50 minutes, until they feel set. Take off the foil and bake for another 10 minutes or so, until the top turns golden and delicious. Let them cool for about 10 minutes before slicing. Just before serving, slice the remaining banana and scatter it on top for a fresh, sweet finish.
