Chef's Cooking Tips
- Bake the custard in a water bath to ensure even cooking and avoid cracking.
- Let the custard cool completely before serving to help it set properly.
Step 1
Heat your oven to 350Β°F (175Β°C). In a heavy saucepan over medium heat, mix the sugar and water for the caramel. Keep stirring until it turns a nice golden brownβthis usually takes about 5 to 10 minutes. Once ready, pour the caramel into a 9x5-inch glass baking dish, making sure the bottom is fully coated.
Step 2
Whisk together the milk, sugar, eggs, and vanilla extract in a bowl until everything is well combined. To get a smooth custard, pour the mixture through a fine mesh strainer right over the caramel layer.
Step 3
Pop the dish into the oven and bake until the custard is mostly set but still a little wobbly in the center, which should take around 45 to 55 minutes. When itβs done, take it out and let it cool for about 15 to 20 minutes before transferring it to the fridge. Chill it for at least 6 hours, or even overnight if you have the time.
Step 4
When youβre ready to serve, run a knife around the edges to loosen the custard. Place a plate on top of the baking dish, flip it carefully and quickly, then lift the dish off. Your custard should come out perfectly with the caramel sauce on topβready to enjoy!
