- Make sure the rice is fully covered with liquid to avoid dryness.
- Let the dish rest for a few minutes after baking to allow flavors to settle.
Step 1
In a big bowl, combine the chicken with salt, ginger garlic paste, chopped tomatoes, green chillies, fried onions, lemon slices, mint, coriander leaves, plum, tamarind, yogurt, chili flakes, coriander powder, cumin seeds, and pepper. Give everything a good mix so the flavors blend well.
Step 2
Heat some oil in a large pot over medium heat. Add the whole spices and let them sizzle for about a minute until fragrant. Then, add the marinated chicken along with the chicken cube and cook for 10-12 minutes, stirring occasionally.
Step 3
Pour in the chicken stock, cover the pot, and let it simmer for 5-7 minutes so the chicken gets tender and flavorful.
Step 4
Drain the soaked rice and add it to the pot. Cook everything together for 5-6 minutes, then cover and let it sit for 2 minutes.
Step 5
Sprinkle in some fresh mint and coriander leaves along with a pinch of yellow food color. Cover the pot again and cook everything on low heat for about 15 minutes, allowing the rice to finish cooking and soak up all the flavors.
Step 6
Once done, fluff the rice gently with a fork. Your delicious chicken biryani is ready to serveβenjoy!
