Combin the garlic, chili pepper, shallot, turmeric, and kosher salt. Use a mortar and pestle to crush everything together, or if you donβt have one, just press and bruise the mixture with the flat side of a cleaver. Transfer this fragrant paste to a bowl, then stir in the brown sugar and olive oil until itβs well mixed.
