Lightly heat your oven to 350ยฐF (175ยฐC) and line a muffin tin with paper liners. In a medium bowl, sift together the flour, baking soda, baking powder, and saltโset that aside for now. In a bigger bowl, beat the butter and sugar until the mixture is light and fluffy. Add the eggs one at a time, making sure each one is fully mixed in before adding the next. Then, stir in the mashed bananas and rum extract. Gently fold in the flour mixture along with the shredded coconut and pineapple, mixing just enough to combine everything evenly. Spoon the batter into the lined muffin cups, filling them up nicely. Pop them in the oven and bake for about 20 to 25 minutes, or until a toothpick comes out clean when you test the center. Let them cool a bit before enjoying!
