Warm your oven to 325°F (165°C). In a large skillet over medium heat, melt the butter and then add the chopped onion. Cook, stirring occasionally, until the onion softens and becomes fragrant, about 5 minutes. Next, stir in the ketchup, lemon juice, Worcestershire sauce, brown sugar, and yellow mustard. Let everything warm through together so the flavors meld.

Meanwhile, heat another skillet over medium-high heat. Season your venison steaks with salt and pepper, then cook them until nicely browned on both sides—around 3 to 4 minutes per side. Once browned, transfer the steaks to a baking dish (about 9x13 inches) and pour the sauce from the skillet over them.
