Step 1
In a bowl, mix together the refried beans and taco seasoning until well combined. In another bowl, soften the cream cheese by stirring it until it's easy to work with, then fold in the guacamole until it's fully mixed.
Step 2
Lay a tortilla flat on your work surface and spread about half a cup of the bean mixture evenly over it. On top of that, spread half a cup of the guacamole and cream cheese mixture. Starting from one edge, roll the tortilla up tightly into a log. Dab a little water along the edge to help seal it.

Wrap the rolled tortilla snugly in plastic wrap and pop it in the fridge for at least an hour, or you can leave it overnight to let it firm up.

When you’re ready to serve, unwrap the rolls and trim off any uneven edges. Slice them into 1-inch pieces. Pop each piece into a cupcake liner, stick a red pepper strip into one end to mimic a little wick, and sprinkle some chopped green onion on top for a fresh touch.
