Step 1
Move your oven rack to the lower-middle position and preheat it to 325 degrees. Lightly spray a 13-by-9-inch baking dish with vegetable cooking spray and set it aside.

In a medium bowl, combine the flour, oats, brown sugar, and salt. Use a fork to mix in the butter until the mixture is crumbly and clumps together a bit. Take about 1 1/2 packed cups of this oat mixture and press it firmly into the bottom of the prepared pan to form a thin crust.

In a larger bowl, toss together the coconut, almonds, cherries, apricots, and milk. Spread this fruit mixture evenly over the crust, pressing down gently with a rubber spatula to help it settle.

Sprinkle the remaining oat mixture over the top of the fruit layer, covering it as best you can. Bake the bars for about 30 minutes, until the top turns a nice light golden color.

Once out of the oven, let the bars cool completely to room temperature before slicing. You can keep them covered on the counter for up to two days.
