Why This Recipe Works
Kitchen Tricks
- Keep an eye on the chicken while broiling to prevent burning.
- Let the chicken rest for a few minutes after cooking to lock in the juices.
Directions
Move an oven rack so it’s about 4 to 6 inches from the broiler and preheat the broiler. Lightly spray a broiler pan with cooking spray to keep the chicken from sticking. In a small bowl, mix together the butter, lemon juice, Italian seasoning, garlic powder, and a pinch of cayenne pepper until it’s all combined. Place the chicken breasts on the pan and brush half of the butter mixture over them. Pop the pan under the broiler and cook for about 6 minutes. Then, flip the chicken over, brush on the rest of the butter mix, and broil for another 6 minutes or until the chicken is cooked through and the juices run clear. If you have a meat thermometer, the internal temperature should hit 165°F. Let it rest a few minutes before serving!
