Step 1
Warm your grill to medium-high. While thatโs warming up, season the pork shoulder all over with salt and pepper. Heat a tablespoon of olive oil in a large skillet and brown the pork on every side, about 4 minutes each, until itโs nicely caramelized.
Step 2
Transfer the pork to a slow cooker lined with a liner for easy cleanup. Pour in some water and BBQ sauce, then cook it on high for about 4 hours or low for 6 hours until the meat is tender and falling apart. Once itโs done, use two forks to shred the pork and keep it warm.
Step 3
For the potatoes, lay out a long sheet of aluminum foil and pile your potato wedges in the center. Drizzle with the remaining olive oil, sprinkle with salt and pepper, then fold the foil up to make a sealed packet. Place this directly on the grill over medium heat, and cook for 25 to 30 minutes, until the potatoes are golden and cooked through.
Step 4
To serve, pile the shredded pork over the potatoes, then scatter cheese curds and diced pickles on top. Enjoy!
