Gently heat some oil in a medium saucepan over medium heat. Toss in the mushrooms, onion, celery, and garlic, and cook everything together until the veggies are nice and tender. Next, add the barley along with the vegetable broth. Bring it all to a boil, then cover the pot and lower the heat to let it simmer gently for about 45 to 50 minutes, or until the barley is soft. Once the barley is cooked, stir in the white beans and let everything cook for another 5 minutes or so, just until the beans are warmed through. Give it a taste, adjust the seasoning if needed, and it’s ready to enjoy!
