Lightly heat your oven to 325ยฐF. In a bowl, mix together the flour, salt, and pepper. Coat the chicken thighs in this seasoned flour. Then, heat some vegetable oil in a skillet over medium heat and brown the chicken on both sides for about 5 to 8 minutes each, until theyโre nice and golden.

Toss the potatoes, carrots, and cabbage into a large casserole dish and arrange the browned chicken on top. In another bowl, combine the beef stock, stout beer, and brown sugar. In a small cup, mix the cornstarch with a little water until smooth, then stir that into the beer mixture.

Pour this liquid over the chicken and veggies, cover the dish, and pop it into the oven. Let it bake for about an hour and 15 minutes. After that, take off the lid and bake for another 45 minutes or so, until the chicken is cooked through and the sauce has thickened up nicely.
