Directions
Lightly heat your oven to 350Β°F (175Β°C) and greasing a 9x13-inch baking dish. In a large bowl, mix together the flour, brown sugar, raisins, coconut, wheat germ, wheat bran, cinnamon, baking soda, and salt. In another bowl, whisk the vegetable oil and eggs until well combined. Pour the wet ingredients into the dry ones, then add the grated carrots and beets, stirring everything just until itβs all mixed together. Spread the batter evenly in your prepared dish and pop it in the oven. Bake for about an hour, or until the center feels springy when you gently press it. Let it cool before serving.
