Step 1
Lightly heat your oven to 350°F (175°C). Next, warm up a large skillet over medium-high heat and cook the ground beef until it’s nicely browned and crumbly, which should take about 5 to 7 minutes. Drain off any excess grease. Then, add the water and taco seasoning to the beef and keep cooking, stirring occasionally, until the water has mostly evaporated—about 5 minutes.
Step 2
In a big bowl, combine the seasoned beef with the cooked rice, tomato soup, diced tomato, chopped mushrooms, red onion, crumbled feta cheese, and sliced green onions. Give everything a good mix. Spoon this filling into your green bell peppers and arrange them snugly in a baking dish.
Step 3
Pop the peppers in the oven and bake until they’re tender and the filling is hot all the way through, which usually takes around an hour. When they’re ready, serve them up with some kalamata olives on the side for a tasty touch.
