Pour the pineapple chunks along with their juice into a saucepan. Add the chopped green bell pepper, brown sugar, cornstarch, soy sauce, and lemon juice. Give everything a good stir until the sugar and cornstarch have completely dissolved.

Place the pan over medium heat and bring the mixture to a boil. Keep stirring occasionally as it cooks for about 10 minutes, until it thickens nicely.
