Step 1
Combine the water, orange juice, salt, brown sugar, garlic powder, oregano, and thyme in a large glass or ceramic bowl. Once everything is combined, add the pork chops and make sure they’re fully submerged. Cover the bowl with plastic wrap and pop it in the fridge to brine for about an hour.
Step 2
While the pork is soaking up those flavors, pour the grapefruit juice, brown sugar, and red pepper flakes into a small saucepan. Heat it up, stirring occasionally until the sugar dissolves and the mixture starts to boil. Turn the heat down and let it simmer until it thickens and becomes syrupy—this should take around 15 minutes. Take 3 tablespoons of the syrup out and set it aside, then add half of the grapefruit sections to the pan and let them cook gently for 5 to 10 minutes.

Get your oven ready by preheating the broiler and positioning the rack about 6 inches from the heat. Take the pork chops out of the brine, give them a good pat dry, and lay them on a foil-lined baking sheet. Brush both sides with the grapefruit syrup you reserved, then sprinkle with salt and pepper. Pop them under the broiler and cook for 7 to 10 minutes on each side, or until the pork is cooked through and no longer pink in the center. If you have a meat thermometer, it should read 145°F (63°C).

Once the chops are done, top them with the remaining fresh grapefruit sections and drizzle the warm relish over everything. Serve right away and enjoy!
