Why This Recipe Is So Enjoyable
Kitchen Tricks
- Roll the turkey slices tightly to keep the fillings secure.
- Drizzle balsamic glaze just before serving to maintain its rich flavor and prevent sogginess.
Step 1
Mix the mozzarella pearls, cherry tomatoes, and fresh basil in a bowl. In a separate small bowl, whisk together olive oil, balsamic vinegar, and a bit of garlic, then pour it over the tomato mixture. Give it a gentle stir to coat everything well, season with salt and pepper, and pop it in the fridge to chill for about an hour.
Step 2
While thatβs chilling, make the dressing by combining balsamic vinegar, mayo, honey, garlic, onion powder, salt, and pepper in a small bowl. Whisk it until itβs smooth and creamy, then transfer it to a jar or container and keep it in the fridge until youβre ready to use it.
Step 3
When youβre ready to assemble, lay out a tortilla and drizzle some of that creamy balsamic dressing over it. Add a layer of baby spinach, then some sliced turkey and Muenster cheese. Sprinkle on a handful of chopped raspberries for a little burst of sweetness. Roll the tortilla up tightly, starting from one edge, into a long tube. Slice it into about 1-inch pieces, and if needed, stick a toothpick in each one to hold them together.
Step 4
Pack the turkey roll-ups alongside the caprese salad into your bento box. Add some sugar snap peas and a handful of almonds for crunch, using a small container if you like to keep things neat. If you want, include a little extra balsamic dressing on the side for dipping.
