Why This Recipe Is So Loved
Cooking Pointers
- Gently fold the berries into the batter to keep them from breaking and turning the batter purple.
- Check for doneness by inserting a toothpick into the center; it should come out clean or with a few crumbs.
Directions
Heat your oven to 400°F (200°C). Grease your muffin tin or line it with paper liners to keep things from sticking. In a medium bowl, mix the buttermilk and wheat bran together and set it aside for a minute. In another bowl, whisk the egg, sugar, oil, mashed banana, and vanilla until everything’s well combined. Now, in a large bowl, mix the flour, oat bran, baking soda, and baking powder. Pour both the buttermilk mixture and the egg mixture into the dry ingredients, stirring just until everything is moistened—don’t overmix. Gently fold in the berries and walnuts. Finally, spoon the batter into your prepared muffin cups and bake for about 20 minutes, or until a toothpick comes out clean. Let them cool a bit before digging in!
