Step 1
In a medium bowl, mix together the flour, oatmeal, and baking powder. In a larger bowl, whisk the soymilk, eggs, brown sugar, and soybean oil until everything is nicely combined. Pour the dry ingredients into the wet ones and gently stir just until everything comes together—don’t overmix. Fold in about 2 cups of the berries.
Step 2
Heat a large skillet over medium heat and brush it lightly with a bit of soybean oil. Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until you see bubbles forming and starting to pop on the surface, then flip and cook for another minute or two until both sides are golden brown.
Step 3
Keep going until you’ve used up all the batter. Serve the pancakes warm with the remaining berries on top and a drizzle of maple syrup if you like.
