Heat your grill to high and giving the grates a light coating of oil so nothing sticks. Place the salmon fillets and thick lemon slices directly on the hot grill. Cook the salmon for about 3 to 5 minutes on each side, or until it flakes easily when you poke it with a fork.

While the salmon is grilling, mix the water, lemon juice, and cornstarch in a small saucepan until the cornstarch is fully dissolved. Add the butter and set the pan over medium heat. Keep stirring the mixture until it comes to a boil and thickens up, which should take around 5 to 10 minutes. Once it’s nicely thickened, take the pan off the heat and stir in the quartered lemon slices, fresh dill, salt, chervil, and a pinch of cayenne pepper.
