Heat some oil in a deep fryer or a large pot until it reaches about 350°F (175°C). While the oil is warming up, mix together the cream cheese, brown sugar, vanilla, and cinnamon in a bowl until it’s nice and smooth. Next, use a round cookie cutter to cut 3-inch circles out of your tortillas. Fold each circle gently to form a little taco shape. Carefully hold the folded tortilla with tongs and fry it in the hot oil until it crisps up and holds its shape, which should take around 2 to 3 minutes. Once golden and cooked, transfer the taco shells to a plate lined with paper towels to drain. Repeat this with all your tortilla circles. Finally, sprinkle some cinnamon sugar over the shells, fill them with the cream cheese mixture, and top with fresh grapes and strawberries. Enjoy!
