Cut the bitter gourd into rings and tossing them with a teaspoon of oil and a pinch of salt in a microwave-safe bowl. Microwave them for about 4 minutes, giving them a good stir halfway through so they cook evenly and become tender.

Meanwhile, heat the rest of the oil in a pan over low heat. Once warm, add the microwaved bitter gourd along with a pinch of asafoetida. Cook gently, stirring occasionally, until the rings start to turn golden and a bit crispy, which should take around 10 minutes.

Sprinkle in the besan (gram flour), ground red chili, and coriander powder. Keep stirring so the spices blend well with the bitter gourd, letting everything cook together for about 3 minutes. Finally, add the jaggery and mix it in thoroughly to balance the flavors with a touch of sweetness. Cook for another minute or so, then you’re ready to serve.
