Step 1
Bring the vegetable broth, hoisin sauce, and sesame oil to a boil in a saucepan. Once itβs boiling, add the quinoa, lower the heat, cover, and let it simmer gently for about 20 minutes until the quinoa is tender. Take it off the heat and let it cool for a bit.
Step 2
In a large bowl, mash the black beans along with the eggs, breadcrumbs, water, garlic, salt, and pepper until everything is well combined. Stir in the cooled quinoa and mix until the mixture holds together.
Step 3
Heat some canola oil in a big skillet over medium-high heat. Scoop out about half a cup of the mixture for each patty and shape them however you like. Cook the patties for around 3 minutes on each side until theyβre nicely browned and crispy. Once done, place them on a paper towel-lined plate to drain any excess oil.
