Step 1
Combin half a cup of water with the reserved pineapple juice in a small saucepan over medium-low heat. Once it comes to a boil, take it off the heat right away. Stir in the couscous so it's fully coated with the liquid, then cover and let it sit for about 5 minutes until the liquid is absorbed and the couscous is tender. Fluff it up with a fork.
Step 2
While the couscous is resting, heat a skillet over medium and add the pineapple chunks along with the black beans. In a small bowl, mix the taco seasoning with a third of a cup of warm water, then pour this over the pineapple and beans. Cook everything together, stirring occasionally, until it’s heated through, about 5 to 7 minutes.
Step 3
Once both parts are ready, divide the couscous between two plates and spoon the pineapple and black bean mixture on top. Serve warm and enjoy!
