Step 1
Warm your oven to 375°F. Lay the bacon out on a broiler pan and bake it until it’s nice and crispy, which should take about 15 minutes. Once it’s done, take the bacon out and lower the oven temperature to 200°F to keep things warm.
Step 2
While the bacon cooks, get your waffle iron heating on high. In a large bowl, whisk together the flours, baking powder, salt, and a few grinds of black pepper. In another bowl, mix the milk, melted butter, and egg. Pour the wet ingredients into the dry and stir just until everything comes together. Then fold in the cheese and herbs.
Step 3
Brush the waffle iron with a little melted butter, and pour in about half of the batter. Close the iron and cook until the waffle is golden and crispy. Pop the finished waffle onto a plate and keep it warm in the oven. Repeat with the rest of the batter, then cut both waffles into quarters so you have eight smaller pieces.
Step 4
Whisk together the Dijon mustard and maple syrup in a small bowl and set it aside. To build the sandwiches, layer bacon, lettuce, and tomato on one waffle piece, drizzle some of the maple-mustard sauce over top, then finish with another waffle piece. Enjoy!
