Directions
Bring about 3 cups of salted water to a boil in a medium pot. Once boiling, add your pasta and cook it until it’s tender but still has a little bite, about 11 minutes, stirring now and then. While the pasta cooks, heat some olive oil in a large skillet over medium heat. Pour in the marinara sauce and diced tomatoes, giving everything a good stir. Next, add the soy chorizo and cook it for 3 to 5 minutes, breaking it up and mixing until it’s evenly combined. Sprinkle in the oregano, cayenne pepper, and paprika, then lower the heat and let it simmer gently for about 8 minutes, just until the pasta finishes cooking. Stir in some fresh basil at the end for a burst of flavor. Once the pasta is done, drain it and pile it onto plates, spooning the sauce over the top. Finish with a pinch of salt and freshly ground black pepper to taste.
