In a saucepan over medium heat, combine the apple cider, honey, cider vinegar, and brown sugar. Let it come to a gentle simmer, then turn the heat down to low and stir frequently as the mixture thickens and reduces to about 2/3 cup, which should take around 20 minutes. Meanwhile, in a separate small pan, warm the whiskey over medium-low heat and let it simmer for about 10 minutes until the alcohol smell fades. Stir the whiskey into the cider mixture, then keep cooking it down until you have about 1/2 cup of a thick, syrupy glaze. Let it cool a bit, then stir in 3 tablespoons of whiskey for an extra kick.

Preheat your oven to 350°F (175°C). Lay the pork chops in a baking dish and brush them generously with the glaze. Pop them in the oven and bake, basting often with more glaze, until the chops are tender and cooked through—this should take about an hour. If you have any glaze left, just bring it to a boil on the stove and drizzle it over the chops before serving for extra flavor.
