Lightly heat your oven to 450ยฐF (230ยฐC) and line a baking sheet with parchment paper. In a mixing bowl, combine the warm water, yeast, and honey, then let it sit for about 10 minutes until it gets foamy and creamy. Add the flour, Parmesan, olive oil, Italian seasoning, and salt to the yeast mixture, and mix until you have a smooth dough that pulls away from the sides of the bowl. Let the dough rest for about 5 minutes.

Turn the dough out onto a lightly floured surface. Pinch off pieces about the size of 3 tablespoons and roll each into a little log. Arrange the breadsticks on your prepared baking sheet. Pop them in the oven and bake for 13 to 15 minutes, until theyโre just starting to turn golden.
