Step 1
Soak the almonds in 2 cups of water with a pinch of salt. Let them sit for at least 8 hours or overnight. When youโre ready, drain and rinse the almonds a couple of times. Next, blend the soaked almonds with 2 cups of fresh water until you get a smooth mixtureโthis should take about 2 minutes. Pour that into a large bowl.
Step 2
Preheat your oven to 350ยฐF (175ยฐC) and lightly grease an 11x15-inch baking dish. In the bowl with the almond mixture, stir in the flour, chocolate chips, olive oil, chia seeds, honey, powdered peanut butter, cinnamon, vanilla extract, and 2 teaspoons of salt. Mix everything together until it forms an even dough.
Step 3
Spread the dough evenly in the baking dish, smoothing it out with a spatula or fork. Bake for 30 to 40 minutes, until itโs firm and lightly golden on top. Let it cool for about 10 minutes before cutting into bars. Enjoy!
