Step 1
Heat a large skillet over medium heat. Cook the sausage patties, turning them often, until theyβre nicely browned and cooked throughβthis usually takes about 10 to 12 minutes. Once done, transfer them to a plate lined with paper towels to drain any excess grease.

While the sausage is cooking, lightly spray a small non-stick pan (about 3 inches) with coconut oil cooking spray and set it over medium heat. In a small bowl, whisk one egg with a pinch of cayenne pepper, plus some salt and pepper to taste. Pour the egg mixture into the pan and let it cook without stirring for about 1 Β½ minutes, until the bottom is set. Flip it carefully and cook for another minute or so until the other side is firm. Take the egg off the heat and put it on a plate. Repeat this with the remaining eggs.

Once the sausage and eggs have cooled, itβs time to assemble the sandwiches. Place an egg patty on the bottom half of an English muffin, add a slice of cheese, top with a sausage patty, and finish with the muffin top. Wrap each sandwich tightly in aluminum foil and pop them in the freezer.

When youβre ready to eat, just unwrap a sandwich and microwave it for about 2 minutes until itβs hot and melty.
