Kitchen Tips
- Toast the bread until golden brown to add a nice crunch.
- Add a pinch of salt and pepper to enhance the avocado’s taste.
Step 1
Lightly heat a skillet over medium heat and cooking the bacon until it’s just a little crispy, about 5 minutes. Once done, transfer the bacon to a cutting board and save the bacon grease in the pan. Chop the bacon into small pieces.
Step 2
Butter both sides of your bread slices. In a bowl, mash together the avocado with lemon juice, minced garlic, turmeric, cumin, garlic salt, cayenne, and a pinch of salt and pepper until the mixture is nice and creamy. Stir in the chopped bacon and some diced tomato.
Step 3
Wipe the skillet if needed, then heat the reserved bacon grease over medium heat. Crack the eggs in and cook them sunny side up until the whites are set, around 3 minutes. Carefully flip the eggs and cook for another minute, seasoning with salt and pepper. Move the eggs to one side of the pan.
Step 4
Turn the heat down a bit and add the buttered bread to the skillet. Toast the bread for about a minute, then flip it over and top the toasted side with a slice of cheese. Spread a generous amount of the avocado mixture over the cheese. Cover the skillet to help the cheese melt, and cook until the toast is golden and the cheese is gooey, about 2 minutes.
Step 5
Finally, remove the toast from the pan, place it on plates, and top each slice with an over-easy egg. Enjoy!
