Pour the vegetable broth into a saucepan, then add the wild rice, brown rice, and a splash of olive oil. Bring everything to a boil, then lower the heat, cover the pot, and let it simmer gently for about 20 minutes. Next, stir in the balsamic vinegar, sherry, garlic, salt, black pepper, and cardamom. Cover the pot again and let it cook for another 10 minutes so the flavors can meld together. After that, add the black beans, mushrooms, cranberries, and parsley to the rice mixture. Keep everything on low heat and cook until the rice is tender and everything is heated through, which should take about 10 to 15 more minutes. Give it a good stir now and then to make sure it all cooks evenly. When itβs ready, taste and adjust the seasoning if needed, then serve warm.
