Step 1
Lightly heat your ovenโs broiler and positioning the rack about 6 inches from the heat. Place the muffin halves under the broiler and toast them until they turn golden brown, which should take around 2 to 3 minutes. While the muffins are toasting, mix together the garlic, butter, and basil in a small bowl. Once the muffin halves are toasted, spread this flavorful butter mixture over each one.
Step 2
In a larger bowl, combine the tomatoes, olives, and tomato paste. In a separate small bowl, whisk together the olive oil, lemon juice, and honey until smooth. Spoon some of the tomato mixture onto each buttered muffin half, then drizzle a little of the olive oil dressing over the top. Add a slice of mozzarella to each and sprinkle with a bit of salt and pepper.
Step 3
Pop the muffins back under the broiler just long enough for the cheese to melt, usually about 1 to 2 minutes. Once the cheese is bubbly and melted, take them out and serve right away for the best flavor and texture.
