Heat your grill to medium-high and give the grates a light oiling so the burgers donβt stick. Season the ground buffalo with salt and pepper, then divide it into 8 equal balls. Using your thumb, make a little well in the center of each ball, about halfway through. Spoon about a tablespoon of blue cheese into each indentation, then carefully fold the meat around the cheese to seal it in. Gently press each stuffed ball into a patty shape.

Place the patties on the grill and cook them to your likingβusually about 4 to 6 minutes on each side if you want them well done. To be sure, you can check the temperature with a meat thermometer; it should read 160Β°F in the center when fully cooked. While the burgers are grilling, toast your buns and spread a bit of mayo on the cut sides. Once the burgers are done, build your sandwich by layering the patty on the bottom bun, then add a leaf of lettuce, a few onion rings, and a slice of tomato. Top it all off with the other half of the bun and enjoy!
