Step 1
Cut each chicken breast in half and then gently pound them to about half an inch thick using a meat mallet or rolling pin. Toss the chicken pieces into a large resealable plastic bag, pour in your favorite amount of buffalo wing sauce, seal it up, and give it a good shake to coat everything well. Pop the bag in the fridge and let the chicken marinate for at least 30 minutes.
Step 2
When youโre ready to cook, preheat your grill to medium heatโif youโre using charcoal, wait until the coals are covered with white ash. Take the chicken out of the marinade, letting any extra sauce drip off, and discard the leftover sauce. Place the chicken on the grill and cook for about 10 to 12 minutes, flipping once halfway through, until the chicken is cooked through and no longer pink inside. If you like, brush a bit more buffalo sauce on while it grills. In the last minute, add two cheese slices to each piece so they melt nicely.
Step 3
While the chicken finishes, toss your buns cut-side down onto the grill for a minute or two until theyโre lightly toasted. Spread some dressing on the toasted buns, layer on some crunchy celery sticks and the buffalo chicken, then top with the other half of the bun. Serve right away and enjoy!
