Step 1
Lightly heat your oven to 425°F (220°C). While that’s warming up, set up a steamer by placing a steamer basket inside a saucepan with water just below the basket. Bring the water to a boil, then add the chicken wings. Cover and steam them for about 10 minutes, or until they’re no longer pink inside and the juices run clear. You can check this with a meat thermometer—it should read 165°F (74°C) near the bone.

Once steamed, spread the wings out on a platter to cool a bit, then pat them dry with paper towels. Lay them out on a baking sheet and sprinkle with some salt and pepper. Pop the wings in the oven and bake for 20 minutes. Flip them over, then bake for another 20 minutes or until they’re nice and crispy.

While the wings are baking, melt some butter in a small saucepan over low heat. Stir in hot sauce, brown sugar, onion powder, garlic powder, and a pinch of cayenne pepper. Let it cook gently for about 5 minutes, stirring now and then until everything’s combined and warm.
