Step 1
Gently heat your oven to 350ยฐF and lightly grease a loaf pan with cooking spray. Take the chicken sausage out of its casing and toss it into a big bowl with the ground chicken. Chop up the green onions, celery, jalapeรฑos, and white onion, but set aside about a quarter cup of each for later. Mix the rest of the veggies into the meat along with ยพ cup of blue cheese, breadcrumbs, half a cup of Buffalo wing sauce, eggs, onion powder, salt, and pepper. Stir everything together until itโs well combined and the veggies are evenly spread throughout.
Step 2
Press the mixture into your prepared loaf pan, smoothing the top with a spatula. Pour the remaining Buffalo sauce over the top, then sprinkle on the reserved veggies and blue cheese. Pop it in the oven and bake for about an hour and a half, until the sides start to bubble and pull away from the pan. To be sure itโs cooked through, check that the center reaches 165ยฐF with a meat thermometer. Let it rest a few minutes before slicing and serving.
