Step 1
In a small saucepan, combine the rice vinegar, water, sugar, and sriracha. Bring it to a gentle boil over medium heat, stirring occasionally until the sugar has completely dissolved, which should take about 2 minutes. While thatβs happening, slice the cucumber and red onion and place them in a shallow dish. Pour the warm vinegar mixture over the veggies and set them aside to pickle while you cook the beef.
Step 2
Heat a large skillet over medium-high heat. Add the ground beef and cook it, breaking it up with a spoon, until itβs no longer pink, about 5 minutes. Drain off any excess grease, then return the beef to the pan. Stir in the soy sauce, brown sugar, green onions, sesame oil, sriracha, garlic, and ginger. Let everything cook together, stirring now and then, until the sauce thickens and coats the beef nicelyβthis should take around 8 minutes.
Step 3
To serve, pile the bulgogi mixture onto hamburger buns and top with the pickled cucumbers and onions. Enjoy!
