Cooking Advice
- Make sure your butter is cold when preparing the streusel to get a nice crumbly texture.
- Don’t overmix the batter to keep the cake light and fluffy.
Step 1
Preheat your oven to 350°F. In a food processor, combine the flour, brown sugar, and 2 teaspoons of cinnamon. Pulse everything together until it’s well mixed. Then, add the butter bit by bit, pulsing in between, until the mixture looks like coarse crumbs with pea-sized pieces. Press half of this crumbly mixture into the bottom of an ungreased 9-inch springform pan and set the rest aside.
Step 2
In a large bowl, toss the apples with Stevia In The Raw®, cornstarch, and the remaining teaspoon of cinnamon until the apples are evenly coated. Spread the apple mixture over the crust in the pan, then sprinkle the remaining crumb mixture evenly on top.
Step 3
Place the springform pan on a baking sheet with sides to catch any drips. Bake for about 60 to 70 minutes, or until the topping turns a nice golden brown. Once it’s done, take it out of the oven and run a knife around the edge of the pan to loosen the cake. Let it cool completely before removing the springform ring. Serve and enjoy!
