Step 1
Warm some oil in a skillet over medium heat. Add the onions and cook them slowly until they’re soft and translucent, which should take about 10 to 15 minutes. Then stir in the honey, thyme, salt, and pepper, and keep cooking everything until the onions turn a nice golden brown—this will take another 10 minutes or so. Toss in the pears and cook just until they soften, around 2 to 3 minutes. Once that’s done, take the pan off the heat and set the mixture aside.
Step 2
Warm up a nonstick skillet over medium heat and lightly spray it with cooking spray. Lay one tortilla in the skillet, then sprinkle a quarter of the Brie over it. Spoon on a quarter of the onion and pear mixture, and top with a second tortilla. To help it cook evenly, press down gently with a smaller pan or even a plate. Let it cook until the bottom is golden, about 2 to 3 minutes, then carefully flip and cook the other side for another couple of minutes.
Step 3
Keep going until you’ve made all the quesadillas. When they’re ready, slice them into wedges or wrap them up if you want to take them on the go.
